Anything But Traditional Potato Salad

A perfect summer cookout side dish recipe. A tangy, herby potato salad with crunchy pistachios and briny capers.
Ingredients
  • 2 pounds baby yukon gold potatoes
  • 1 tablespoon salt
  • ¼ cup white vinegar
  • ½ cup coarsely chopped pistachios
  • 2 tablespoons shallots, minced (1 small shallot)
  • 1 tablespoon lemon juice, plus the zest of 1 lemon
  • 2 tablespoons parsley or mint, chopped
  • 1 tablespoon capers, drained (optional)
  • ½ cup mayo
  • salt and pepper to taste
Instructions
  1. Cut larger potatoes into bite size chunks. Put potatoes, tablespoon of salt, and vinegar in a large pot. Cover the potatoes with water by 1 inch. Bring to a boil over high heat. Boil until potatoes are fork tender. Depending on the size of the potatoes, this could take 15-30 minutes.
  2. Drain potatoes and allow to cool.
  3. When potatoes are cool, add to a large bowl. Add the rest of the ingredients and stir to combine. Taste and adjust seasonings to taste. Serve immediately or cover and refrigerate until ready to serve.
