Roasted Broccoli with Hummus

Broccoli florets roasted with garlic and olive oil until the tops are browned and crunchy, then tossed with lemon juice and hummus.
Ingredients
  • 4 medium broccoli crowns (about 20 ounces after removing stems)
  • 3 cloves of garlic, coarsely chopped
  • 2 tablespoons extra virgin olive oil
  • salt and pepper to taste
  • juice from half a lemon
  • ⅓ cup hummus
Instructions
  1. Preheat oven to 425°F.
  2. Separate broccoli crowns into large florets or chop into large pieces. In a large bowl, toss broccoli, garlic, oil, salt and pepper to coat. Spread broccoli onto a baking sheet, to make one even layer.
  3. Bake for 25 minutes, until tops are brown and crunchy.
  4. Return broccoli to bowl while still hot. Add lemon juice and hummus. Stir to combine and serve!
